There’s something extraordinary about the moment you taste an authentic Roman Pinsa — the light, crisp texture, the subtle nutty flavour, and that unmistakable airiness that sets it apart from pizza.
But what’s even more remarkable is that South Africa can now experience it first-hand, thanks to Christian Wilderer — the country’s first Pinsaiolo Master Chef.

A New Chapter in South African Food Innovation
In a groundbreaking move, Wilderer and Core Catering Supplies have teamed up to launch Pinsa Club — introducing Pinsa Bases, Pinsa Smiles, and Pinsette to the South African trade for the very first time. This partnership marks a new era for local restaurants, cafés, caterers, and delis. Together, Wilderer’s artisanal expertise and Core Catering’s extensive network make it possible for businesses to serve authentic Roman Pinsa — a first for South Africa.
“The goal was simple,” says Christian. “To bring something truly authentic, but also something lighter, healthier, and more sustainable to the local food scene.”

Why This Partnership Works
At its core, this collaboration thrives because it blends artisanship with accessibility. Wilderer brings years of craft, tradition, and culinary innovation, while Core Catering ensures that quality ingredients and products reach chefs, delis, and restaurants nationwide.
“It’s about sharing passion — not just a product,” Christian explains. “Every Pinsa base we produce is fermented for 24 hours and crafted with the same precision you’d expect in Rome. It’s about keeping authenticity alive while empowering South African kitchens.”

Q&A with Christian Wilderer
Q: What inspired you to become South Africa’s first Pinsaiolo Master Chef?
A: I’ve always been passionate about both tradition and innovation. During my time in Italy, I fell in love with the craft of Pinsa-making. It’s ancient yet modern — a perfect balance. Becoming certified as a Pinsaiolo Master Chef felt like the natural next step for bringing that authenticity home.
Q: Why do you think Pinsa resonates so strongly with chefs and customers alike?
A: Pinsa is light, crisp, and far easier to digest than traditional pizza. It gives chefs versatility — you can top it gourmet-style or keep it rustic. It’s the kind of food that bridges comfort and craft.
Q: What does this mean for South Africa’s food and hospitality industry?
A: It’s a chance for local businesses to offer something unique — not just another pizza, but an authentic product that stands out. The response from chefs and delis so far has been incredible.
Q: Who is Pinsa for?
A: Anyone in the trade who values quality. Whether you’re a small deli or a large restaurant group, our Pinsa bases are designed to save time without compromising authenticity.
Q: You’ve also introduced Pinsa Smiles and Pinsette — can you tell us more about them?
A: Absolutely! Pinsa Smiles are our sandwich-style Pinsa — folded and filled, perfect for grab-and-go meals, cafés, and casual dining menus. They’re light yet satisfying, and the dough’s crisp exterior with a soft centre makes every bite memorable. Pinsettta (Pinsette – plural) is essentially a half-size Pinsa base, ideal for smaller portions, tasting menus, or venues wanting variety without waste. Both products make it easy for chefs and caterers to serve authentic Pinsa in a range of creative ways.
Q: What makes these new products such an exciting addition for the trade?
A: Convenience without compromise. Each Pinsa Smiles and Pinsetta base is made with the same care, fermented for 24 hours, and ready to top and bake in minutes. It’s about saving time in the kitchen while maintaining that authentic Roman quality.
Q: What drives your passion for what you do?
A: It’s all about the joy of sharing something meaningful (and delishes!!!). Food connects people — and to know we’re bringing a taste of Rome to South Africa is deeply rewarding.
